How to Choose a Ripe Avocado
A perfectly ripe avocado is key for this recipe. Ripe avocados are usually dark green to almost black. Gently squeeze the avocado in your hand. It should feel softer when it's ripe, but not mushy. If the avocado is too black or mushy, then it is too ripe and may taste bitter. If the avocado is still green and hard, then it is not yet ripe.
To ripen faster, leave the avocado out on the counter along with bananas. If you buy several avocados and don't want them to ripen too quickly, store them in the fridge so they ripen slower.

- Lemon: Fresh lemon juice adds a bit of acidic flavor and also help prevent the avocado from oxidizing so it will maintain it's vibrant green color. You can substitute with fresh lime juice, if desired.
- Salt: Always use quality salt like Himalayan or sea salt.
- Garnish (optional): I like to garnish the dip with fresh herbs like cilantro or parsley.
How to Make Vegan Avocado Dip
It doesn't get any easier than this! You only need a food processor to make this in just 3 minutes.
- Prep the avocado: Cut the avocado in half, remove the pit and place the pulp in the bowl of a food processor or blender.
- Make the dip: Add the remaining ingredients - lemon juice, yogurt and salt. Process until the mixture is thick and creamy. It will be a light vibrant green color.
- Finish: Transfer the avocado dip to a small bowl and garnish with fresh cilantro leaves. Serve as a spread, as a dip or with tacos, burritos and more!
NOTE: If you prefer a lighter texture for the dip, you can add a splash of water and pulse to your desired consistency.
