- Garlic: For the best tomato sauce, garlic is essential. You can omit, if desired.
For the homemade vegan cheese:
- Cassava/yuca/tapioca starch: This ingredient helps to thicken the cheese and give it the chewier texture that is characteristic of cheeses. If you don't have any of these starches on hand, you can use less water to make less runny cashew cheese, following the same steps below.
- Raw cashews (unroasted and unsalted): They are the base of the cheese and add texture and flavor.
- Lemon juice: Helps bring it all together.
- Sea salt: Use high quality pink or Himalayan sea salt.
- Water
If you don't want to make homemade vegan cheese, you can use store-bought vegan mozzarella cheese.

How to Make Cashew Cheese
To make the cashew cheese, you need to start by soaking the cashews. Add them to a medium bowl with boiling water. Let them soak while you make the pizza dough.
Once they have soaked, you simply blend the soaked cashews together in a food processor with the lemon juice, cassava starch, water, and salt until creamy and smooth.
Now you have cashew cheese that you can layer over the pizza sauce to make the pizzas.
Make Homemade Tomato Sauce
To make a simple homemade tomato sauce, heat a large pan over medium heat. Once hot, add the onion and garlic with a splash of water and cook until the onions are translucent. Add the diced tomato and cook until soft. The tomatoes will cook down a little.
Once cooked, transfer to a bowl while you prepare the rest of the pizza ingredients.
How to Make Gluten Free Pizza Crust (in 5 minutes)
To prepare the crust, combine the yogurt, gluten free flour mix and salt in a large bowl. Mix together with a spoon, then finish kneading the dough with your hands to form a ball.
Divide the dough into two equal parts. Use a rolling pin to roll one out on a piece of parchment paper dusted with a little flour to prevent it from sticking.
How to Make Gluten Free Vegan Pizza
This recipe makes two personal pizzas.
Once you have the pizza dough, heat a small amount of olive oil in a large pan. Place the first pizza dough on the hot pan and cook until the crust is lightly browned on both sides.

- Smooth tomato sauce: If you don't want any chunks of tomato in your sauce, you can mash the tomatoes slightly while cooking the sauce in the pan.
- Add vegetables or fresh basil: To make a veggie pizza, you can add freshly chopped veggies like broccoli, red onion, red bell peppers, fresh basil, or any of your other favorite toppings.

- 1 small red onion finely diced
- 1 garlic clove minced
- salt and pepper to taste
For the cashew cheese:
- ½ cup raw cashews
- ½ cup water
- Juice of ½ lemon
- ½ tablespoon cassava starch
- Sea salt
- Dried oregano
Instructions
Prepare the tomato sauce:
- Add the onion and garlic to a large pan with a splash of water. Cook, stirring occasionally, until the onions are translucent. Add the diced tomato and cook until soft. Transfer the mixture to a large bowl and set aside.
Start the cheese:
- Place the cashews in a bowl with boiling water.
Make the dough:
- In a large bowl, use a spoon to mix together the flour, yogurt, and salt. Use your hands to finish kneading and form a ball with the dough.
- Divide the dough into two equal parts and roll one out on a piece of parchment paper dusted with a little flour to prevent it from sticking.
- Add a small amount of olive oil to a large pan set over medium heat. Once hot, add one of the dough pieces and cook until the bottom is golden brown. Flip the dough and cook for 2 to 3 additional minutes, while you finish the cheese.
